This recipe came up after a friend’s phone call who ended as: hey I only have shrimps, coconut milk and noodles which are due soon, could you please post a recipe with these ingredients to help me use the noodles? Oh what a great idea!! Someone giving me the ingredients and me coming up with a recipe !! I went for it and here it comes: 

 

 

 

Shripms & Coconut Milk Noodles

Ingredients
  • 250gr defrosted and peeled shrimps (used some precooked)
  • 1 can coconut milk (250 ml)
  • 250 gr vegan flat noodles
  • 2 tbs olive oil (used a lemon infused one) .
  • sea salt
  • 1 tsp cornflour
Instructions
  1. In a medium sized pot fill up (3/4) with water and let it boil.
  2. In a frying pan pour the olive oil and cook the shrimps until they get a nice golden color.
  3. Add the coconut oil and lower the temperature.
  4. Add salt.
  5. In a glass pour some water and stir in the cornflour
  6. Add the mixture to the sauce and stir until it thickens. Turn off the stove.
  7. Boil the noodles in salty water according to package instructions.
  8. Strain them and add them to the coconut sauce.
  9. Stir and serve.
Notes
If you do not have lemon infused lemon, pour to the shrimps the juice of a small lime just before the coconut milk.
You may use egg noodles as well.
