Ok I would never thought that my project of zero food waste and decluttering my pantry would lead to to a second post in one week!!! These cookies were the result of finding some dried strawberries that reached their expiry date. And I was so frustrated since I managed not to let any of my food supplies expire. And then I thought I had to use them immediately. A super yummy cookie was the perfect result. Few ingredients, the smell of real butter and the sweetness of the strawberry make the most chewy and delicious cookies!! 

They are the perfect match to a cold glass of fresh milk after a long day !!! 

 

Strawberry Cookies

Yummy and Chewy Cookies with the sweet taste and colour of strawberry

Ingredients
  • 115gr brown sugar
  • 28gr unsalted butter at room temperature
  • 1 egg
  • ½ tsp vanilla extract
  • 100gr self rising flour
  • 63gr dried strawberry
Instructions
  1. Preheat the oven at 175 degrees Celsius,
  2. At a standing mixer blend the sugar with the butter until well mixed
  3. Add the egg and the vanilla extract and mix
  4. Add the flour and with a spatula mix it into the rest of the ingredients
  5. Chop the dried strawberries in very small cubes
  6. Keep approximately 24 pieces and mix the rest of the strawberries to the butter
  7. With a spoon ( ideally an ice cream scoop), spread 12 small pieces of butter to an oven pan covered with cooking paper
  8. Spread the rest of the strawberries on top of the cookies
  9. Bake for 11 minutes
  10. Let them for 5 minutes and then spread the cookies on a cooling rack
